Sweet and Chewy – A Delicious Snack

Almond Joy. Mounds or Bounty Bars, are just some of the names people call these keto chocolate bars.
Sweet and chewy coconut covered with sugar free chocolate. A great snack for you chocolate addicts.
This recipe calls for an isomalt sweetener. When baking at high heat you may need a sweetener that better mimics the way sugar reacts to heat. You can substitute one of these Polyols: Sorbitol or Isomalt. These sweeteners are higher in carbs than Erythritol and so you can't over consume them in your keto diet. They will also provide keto cookies with crisp edges and chewy centers. This ability to maintain moisture is good for muffins and cakes. These two sweeteners can also make a thick syrup-like consistency for treat like Gooey keto caramel.
You can use Erythritol in place of the isomalt, but make sure to eat these candy bars within 2 to 3 days, otherwise the erythritol is likely to crystallize and give the coconut filling a slightly grainy texture.

Ingredients
215 g sugar-free milk/dark chocolate or homemade
65 g unsweetened shredded coconut
50 g isomalt or sorbitol (you can sub this out for erythritol, but the coconut filling may end up grainy after it has cooled since erythritol crystallizes easily)
1 tb. water
100g full-fat coconut milk / OR coconut cream / OR water
